Sourdough Discard Pancakes

Ingredients
- 150 grams AP flour
- 30 grams sugar
- 5 grams salt
- 15 grams baking powder
- 1 egg
- 50 grams sourdough discard (not active starter)
- 250 grams milk
- 10 grams vanilla extract
- 40 grams melted butter
Directions
- Step 1
- Melt butter in the microwave and set aside to cool.
- Step 2
- In large bowl, add flour, baking powder, salt, sugar and whisk until combined. Set aside.
- Step 3
- In medium bowl, mix together discard, milk, vanilla.
- Step 4
- Add eggs to the dry ingredients.
- Step 5
- Add in the discard mixture.
- Step 6
- Stir until just combined. The mixture should be slightly lumpy.
- Step 7
- Add in melted butter and stir to combine. Mixture should still be slightly lumpy.
- Step 8
- Heat griddle on medium. Butter when hot.
- Step 9
- Add batter to the griddle using a small measuring cup – make these as small or large as you want!
