These potatoes are the perfect side dish for many things. I often serve them with my grilled chicken. They are super kid-friendly too. Even my picky eater loves them! The secret ingredient is what makes them so good!
I love them because they’re so easy to make. It takes mere minutes to cut the potatoes up, throw them in a bowl with 3 ingredients, then throw them in the oven. If you’ve got 35-40 minutes, MAKE THESE TONIGHT!
Ingredients to make these perfect roasted potatoes
Your ingredients list is simple, I bet you have most of this list on hand!
- Small potatoes (red or gold will work!)
- Salt
- Olive Oil
- Parmesan
Yep – parmesan, that’s the secret ingredient! I’ve used both grated and shredded in this recipe, and both work perfectly! There’s something about roasting parmesan on a potato that just WORKS.

I have served these roasted potatoes with many main dishes. They go beautifully with chicken, beef, salmon! Last night I served them with my Perfect Grilled Chicken, and they were amazing! Try these tonight!

Ingredients

- 1.5 pounds Petite Gold Potatoes, you can also use red potatoes
- 2 tbsp Olive oil
- 1/2 tsp Salt
- 1/3 cup Parmesan grated or shredded
Directions
- Step 1
- Preheat your oven to 425, and use the convection setting if you’ve got it.
- Step 2
- Wash and dry potatoes. Cut into quarters, and place in a large bowl.
- Step 3
- Drizzle olive oil over potatoes until just coated, around 2 tbsp.
- Step 4
- Salt potatoes. You just need about 1/2 tsp here, as the parmesan is salty and adds flavor.
- Step 5
- Shake about 1/3 cup parmesan over potatoes and mix until potatoes are evenly coated.
- Step 6
- Pour potatoes into a greased 9×13″ dish and roast in the oven for around 30 minutes. If you’ve baked on convection, it may take a shorter amount of time. Just keep your eyes on them and take them out when roasted to your liking!

NOTES
- This is great sprinkled with fresh herbs, like parsley!
- You can use red or gold potatoes.
- Oven times vary, especially if you’re using the convection setting. Food will cook faster on convection.
- This recipe is air fryer compatible! My kids hate air fryer food but don’t mind the convection over (it’s the same thing, I know!) so I haven’t tested the temp/time in the air fryer. Let me know if you cook them that way!
