Some of my favorite dishes are made on the grill. This perfect grilled chicken is one of them. We grill all year long. Here it is March, and I’m dreaming of summer. Grilling is perfect for summer because your house doesn’t heat up from the oven or stove. However, grilling in the winter takes grit. You really gotta love the taste of grilled food to get out there in 20 degree weather. You will not be sorry with this grilled chicken though; I make it all year round! Bundle up and let’s grill!
We grill a lot of chicken. Last spring I started buying chicken in bulk from Costco. Their chicken breasts are usually enormous! So, to get an even cook on the grill you either have to cut the breast down to a couple of smaller pieces, or pound the chicken to be all one width. I flatten my chicken, and it really makes them so tender and delicious.
To flatten and tenderize your chicken, just take the breast and layer it between 2 pieces of parchment, wax paper, or saran wrap. Get yourself one of these meat tenderizers, then pound out all your frustrations until you’ve got an even width along the whole breast. Takes about 15 seconds, and makes a world of difference!
Next, I spray a bit of olive oil on each side and season with McCormick Grill Mates Seasoning. My favorite is the Montreal Steak Seasoning. I know McCormick labels this as a steak seasoning, but this is my secret weapon. It’s fantastic on chicken.
Place your chicken on a preheated medium grill – not too hot! That’s my other secret. You want your temp to be right around 350 degrees. Depending on the thickness of your chicken, cook 5-7 minutes per side. This chicken is seriously so good. Try it with a flavorful and fresh side dish, like our Couscous Salad with Cucumbers and Tomatoes. If you’re feeling more decadent, put this grilled chicken over our Homemade Fettuccine Alfredo. You will NOT be disappointed!
Perfect Grilled Chicken

Ingredients
- Chicken breasts
- Spray oil of your choice
- McCormick Grill Mates Montreal Steak Seasoning, to taste
Directions
- Step 1
- Preheat grill to medium (350).
- Step 2
- Place a chicken breast between 2 sheets (or folded sheet) of saran wrap. Pound to flatten until breast is all one thickness.
- Step 3
- Spray both sides of chicken with your oil of choice.
- Step 4
- Sprinkle both sides of chicken with McCormick Grill Mates Montreal Steak Seasoning, to taste. Use as much or as little as you want.
- Step 5
- Place chicken on grill, and grill each side about 5-7 minutes, depending on thickness.
- Step 6
- Remove from grill when chicken reaches proper internal temperature. Let rest about 5 minutes before slicing.
