Ingredients
- 225g all-purpose flour
- 50g cocoa powder
- 2 tsp baking powder
- 1/2 tsp baking powder
- 1 tsp salt
- 150g sourdough discard
- 150g greek yogurt (or sour cream)
- 120g vegetable oil (or avocado oil)
- 200g brown sugar
- 1/4 cup milk
- 2 eggs
- 2 tsp vanilla extract
- 200g chocolate chips
Directions
- Step 1
- Preheat oven to 400. Prepare pan with liners. Batter makes approximately 15-18 muffins.
- Step 2
- Combine discard, yogurt, oil, brown sugar, milk, eggs, vanilla in a medium bowl and mix until smooth.
- Step 3
- Combine flour, cocoa powder, baking powder, baking soda, salt in large bowl and mix.
- Step 4
- Add the wet ingredients to the dry ingredients and mix just until combined. Batter will be thick and slightly lumpy but no pockets of flour should remain.
- Step 5
- Fold in chocolate chips.
- Step 6
- Fill muffin tin about 2/3 full.
- Step 7
- Bake for 18-20 minutes. Donโt overbake.
